Vinification: The grapes are harvested in September at full physiological ripeness, with selection of the ripest bunches, which tend to be: Vermentino and Albarola. The grapes are then placed on special containers and left to dry until November/December for a crushing and fermentation process lasting about 18 months
Description: Intense amber colour with copper highlights
Perfume: Intense and intriguing bouquet, complex and persistent
Taste: Hints of blond tobacco, dates, with balsamic notes (resin, sage and rosemary) all framed by a very high profile minerality are noticeable
Matching: It ‘s recommended to be tasted on its own or with dry pastries
