Vinification: Soft pressing, cleaning of the must and start of fermentation in steel. Fermentation and ageing in casks on the lees without racking for ten months. Resting in bottle for eight months
Description: Intense straw-yellow colored with bright gold-green nuances
Perfume: aromas of Mediterranean aromatic herbs (sage, thyme, resin), ripe yellow fruit (peach and mango), citron rind, acacia honey with a fine silica silica.
Taste: Mouth-filling, balsamic and mineral on the palate, ending on a note of savoury almond and candied citrus fruit.
Matching: Perfect with fish and shellfish dishes, it is ideal paired with raw fish and white meats.
