It is a rare honey because the cherry blossoms occur in early spring, when the bee families are still quite small and the weather conditions are often unstable; for these reasons it is difficult to produce it in satisfatory quantities.

It has a variably light color, it tens to crystallize easily and it has a delicate smell and a sweet taste reminiscent of caramel.
