Cooling to 10 \u00b0C with natural decanting. Fermentation at a controlled temperature of 16 to 17 \u00b0C for 15 days. Maturation from 60 to 90 days on fine lees. Aging in stainless steel until March<\/p>\n<p><strong>Description<\/strong>: Deep straw yellow with golden hues<\/p>\n<p><strong>Perfume<\/strong>: Lovely opening of yellow-fleshed fruits (apple, peach, banana), tropical fruits followed by distinct floral hints with mineral finish<\/p>\n<p><strong>Taste<\/strong>: In the mouth, it &#8216;s dry, warm, with great structure and strong personality, with soft tones and very long persistence<\/p>\n<p><strong>Matching:<\/strong> Multiple, fish-based, try it with trofie and pesto or grilled shellfish.
